Our signature Fiesta Mix is literally the most versatile Mexican food flavoring. Yes, it is a wonderful taco mix that you literally can’t go wrong with BUT it is also so much more as you will see below.

REFRIED BEANS
2 pounds of pinto beans – bring to boil in one gallon of water (16 cups)
Drain and Rinse Beans
Saute 1 whole chopped onion in 3 tablespoons of Lard
Add Beans, 1 gallon of water (16 cups), 1/2 cup of FIESTA MIX and 1/2 cup of cumin
Bring to a boil then simmer for 6 hours – If your beans are still tough add 1 -2 teaspoons of baking soda and simmer for 1 more hour
Once your beans are tender, turn off heat, use an immersion blender (or potato masher) to blend to consistency you like
Stir in 2 Tablespoons of salt
Then Enjoy. Also freezes well.

LAYERED MEXICAN DIP
1 16 oz can refried beans (or homemade)
1 cup guacamole 1 cup sour cream
2 Tbs FIESTA seasoning
1 cup shredded cheddar cheese
1 cup shredded Monterey jack cheese
4 green onions, chopped
2 tomatoes, diced
1 can olives, sliced
On a large platter with edges, or 9 x 13 pan, spread each ingredient one at a time, mixing sour cream and taco seasoning before spreading sour cream. Cover and refrigerate. Serve with chips!

So simple!
Literally cut peppers and onions in stripes, sprinkler FIESTA MIX over (use amount to preference), then sauté in pan (our favorite is cast iron). Then Enjoy.
